If the idea of a meringue topped with cream and a chocolate sauce is tempting, go for it!

Ingredients

For the Swiss chocolate meringues

  • 4 eggs
  • 250 gr granulated sugar
  • A few drops of lemon juice
  • 50 gr dark chocolate

For the mascarpone whipped cream

  • 25 cl heavy whipping cream
  • 20 gr powdered sugar
  • 100 gr mascarpone cheese
  • 1 teaspoon vanilla extract

For the chocolate sauce

  • 200 gr dark chocolate
  • 10 cl heavy whipping cream

Instructions

For the Swiss chocolate meringues

  1. Preheat the oven to 100°C and line a baking sheet with parchment paper.
  2. Melt the chocolate using a double boiler, stirring regularly until the chocolate is perfectly melted and smooth. Let it cool.
  3. Combine egg whites, sugar, and lemon juice in the heatproof bowl of an electric mixer.
  4. Whisk constantly using a double boiler, until sugar is dissolved and whites are warm to the touch.
  5. Transfer the bowl to the electric mixer fitted with the whisk attachment, and whip, until stiff, glossy peaks form.
  6. Using a pastry bag with a large round tip, pipe the meringue. If you don’t have a pastry bag, you can shape your meringues with a spoon
  7. Using a fork, drizzle the chocolate above each meringue, and with a knife, swirl to obtain a marble effect.
  8. Bake for about 2 hours.
  9. Turn off the oven, open the door a little and allow to cool for at least 1 hour.

For the whipped cream

  1. Pour the heavy cream and mascarpone into a cold bowl.
  2. Whisk at high speed with an electric mixer.
  3. When the mixture starts to thicken, add the sugar and vanilla extract and continue beating until stiff peaks form.

For the chocolate sauce

  1. Cut the chocolate into pieces.
  2. Melt the chocolate using a double boiler.
  3. Add the heavy cream and whisk until you obtain a smooth sauce.

Presentation

  1. Place a tablespoon of whipped cream on each meringue.
  2. Pour a tablespoon of chocolate sauce over each meringue.
